About the Position
Cook is primarily responsible for preparing, supplying, and supporting Culinary Operations, to include all venues, and special events, as well as holding and storing food items in accordance with standardized recipes, departmental procedures, and sanitary and safety guidelines.
Shifts are 11:30am-7:30pm. Must be flexible in days of the week.
Pay is $21/hr-$24/hr
Essential Duties:
- Adhere to consistency standards—recipes, measurements, and techniques
- Excellent prep skills—knife skills, labelling
- Can prepare Mise En Place for any station in a single zone with supervision
- Can produce sauces, fabricate, and properly cook meat and fish
- Can set up and break down a zone
- Can execute salad bar and dessert stations, soups, sandwiches, sides—with minimum supervision
- Assists catering as assigned
- Able to support meal plan and carry-out fulfillment
- Competent in reading tickets for meal plan and carry-out orders
- Can prepare healthcare cuisine: pureed and ground foods, with supervision
Essential Competencies:
- Dice vegetables using dicing machine
- Slice meats, tomatoes, using slicing machine
- Safely operate buffalo chopper
- Follows hand health, sanitation, and uniform protocols
- Proper use of pocket thermometer and wiping cloths
- Competent at labeling and properly storing prepped foods
- Properly sanitizes work area, utensils and cutting boards between tasks
- Follows assigned recipes, using scales and measuring/portioning tools
- Competent at heating and cooling PHFs per ServSafe Guidelines
- Competent in all Safety regulations and SOPS in the GHBC Kitchen
- Competent at following and updating check lists for opening and closing own station
- Performs tasting measures in accordance with departmental and health regulations to ensure the freshness and tastefulness of food.
- Consistently monitors department and work area for cleanliness and overall attractiveness, ensuring sanitary guidelines are followed and items and ingredients used in food preparation are stored properly.
Requirements/Qualifications:
- High school graduate, GDE or equivalent preferred.
- Must be able to read, write, measure, and follow instructions in English.
- Up to date SERV Safe Food Handler’s Sanitation Certificate preferred
- Two years or more of food service preparation experience required.
- Excellent communication skills preferred. (Conversational English required)
- Must possess the ability to deal tactfully with others.
